Broccoli Cheese Balls are a delicious snack for parties or game days. Make it an after-school snack and your kids will think you're the best parent ever. Next to Fried Mac and Cheese, I think these broccoli and cheese balls are the best snack for kids.
* Ingredients :
° 1 1/2 cups thick fresh broccoli florets
° 1 cup grated Colby cheese
° 1 c grated-cheddar cheese
° 4 ounces of Velveeta, cut into small pieces
° 1/2 tsp crush pepper red flakes
° 2 1/4 cups panko breadcrumbs, divided
° 1 egg, lightly beaten
° 1/2 cup all-purpose flour
° 2 eggs, lightly beaten
° Vegetable or canola oil
Steam the broccoli until it softens a little. Let cool.
Finely chop the broccoli. You need pieces to be 1/4 inch or less. Placing in bowl.
Add cheese, red pepper flakes, 1/4 cup panko breadcrumbs and 1 egg to the bowl with the broccoli. Stir well.
Use your hands to form the mixture into balls, using about a rounded tablespoon for each ball. You should be 12-14.
Place the balls on a plate and refrigerate for at least 30 minutes.
Put the flour in a bowl.
Placing 2 light beaten eggs in second bowl also blend in 1 tsp water.
Placing rest 2 c breadcrumbs in third bowl.
Pour about 2 inches of oil into a Dutch oven or heavy saucepan. Heat the oil to 375 degrees. For great results, utilize thermometer.
Remove the broccoli balls from the refrigerator, top with the flour, dip in the egg mixture, then top with the panko breadcrumbs.
Fry for 4 balls at time, cooking to golden brown on all-sides.
Drain on paper towel-lined dish.
