This is my mother's recipe for rice pudding. It's the best I've ever tasted and gets great reviews from everyone I serve.Sprinkling with nutmeg or cinnamon if wanted . Use short or medium grain rice for a creamy pudding.
* Ingredients :
° 3/4 cup uncooked white rice (for a creamy pudding, use short or medium-grain rice)
° 2 cups of milk, divided
° 13 cups white sugar
° 1⁄4 teaspoon salt
° 1 scrambled egg
° 2⁄3 cup raisins
° 1 tablespoon butter
° 1⁄2 teaspoon vanilla extract...
* Directions :
In a medium saucepan, bring one and a half cups of water to a boil.
Add rice and stir.
Minimize heat, covering & simmer about 20 min .
In other saucepan, mix cook rice with 1 1/2 c milk, sugar & salt.
Cooking on medium heat to thick & creamy, 15 to 20 min .
Add half a cup of the remaining milk, beaten eggs, and raisins.
Cooking an additional 2 min, stir constantly.
Removing from heat & adding butter & vanilla.
