° 1 sachet of baker's yeast
° 5 cl of lukewarm water
° 10 cl of milk
° 50 gr of butter (melted)
° 30 gr of brown sugar
° 1 egg
° 1 pinch of salt
° 1 teaspoon of vanilla extract
+For garnish :
° 100 gr of butter (soft)
° 60 gr of brown sugar
° 3 tablespoons of cinnamon
° 1 teaspoon of nutmeg (grated)
° A little milk (for brushing)
+For the icing:
° 100 gr of icing sugar
° 3 tablespoons of fromage blanc (crème fraîche ...)
* Preperation :
Brioche dough:
Prepare the yeast in 5 cl of lukewarm water. In the mixer bowl or in a salad bowl, mix the ingredients, then knead for 15 min. Cover and let stand 1 hour until the dough doubles in size.
Shaping:
Butter a round or rectangular mold and flour it.
On your floured work surface, roll out the dough, giving it a rectangular shape. In a bowl, combine the butter, sugar and spices. Spread this mixture over the entire surface.
Roll the dough lengthwise. Cut out ten small rolls, place them in the mold, cover with a kitchen towel and let them rise for 1 hour.
The cooking :
Preheat the oven to 180 ° C. Brush the rolls with milk. Bake and cook until they are a little golden ... about 15 minutes.
The icing:
Mix the icing sugar with the crème fraîche. Pour this mixture over the hot rollers.
