A combination between traditional chicken pot pie & chicken & dumplings. My all family is begging me to do it!
* Ingredients
°Half a cup of butter
°2 cloves minced garlic
°cup chopped onion
°Half a cup of chopped celery
°½ cup chopped small carrots
°All-purpose flour cup
°2 teaspoons white sugar
°1 teaspoon salt
°1 teaspoon dried basil
°Half teaspoon ground black pepper
°4 cups chicken broth
°1 (10 ounces) can peas, drained
°4 cups diced cooked chicken
°2 cups curd bread mix
°2 teaspoons dried basil
°Half a cup of milk
* Directions :
Step 1 Preheat oven t350°F (175°C). Greased 9" * 13" baking plate with some butter.
Step 2 In a skillet, melt butter over medium-high heat. Cook garlic, onion, celery, and carrots, stirring in butter, until softened. Mix flour, sugar, salt, 1 teaspoon dried basil and pepper. Stir in the broth and leave to boil. Stirring constantly, boil for 1 minute, reduce heat, and stir in peas. Simmer over low heat for 5 minutes, then mix in chicken. Transfer the mixture to the prepared baking dish.
Step 3 In a medium bowl, combine baking mix with 2 teaspoons dried basil. Stir in the milk to form a paste. Divide the dough into 6 to 8 balls. On floured wax paper, use your palms to flatten each ball of dough into a round shape; Place on top of the chicken mixture.
Step 4 Bake in the preheated oven for 30 minutes. Covering with foil, & baking about other 10 min. To serve, pour chicken mixture on crackers.
