Orange Cranberry Bread & Glaze

Here's a nice big cake with fresh cranberries, orange zest and glazed with a light almond glaze.

Blend #1
-1 1/2 cups of butter or margarine
-2 1/2 cups of sugar
-6 eggs
-1 cup sour cream
-zest of 1 orange
Blend #2
-3 cups of flour
-3 tsp baking powder
-1 tsp baking soda
-2 c fresh cranberries cutting in half
Thoroughly mix the ingredients of mixture #1 with a mixer
Add mixture #2 and mix with the mixer until the mixture is just homogeneous
Place in a buttered 15 x 10 in. pan or a large tube pan
Bake in a preheated oven at 350° for about 65 minutes
Cool and glaze with almond flavored glaze*
Almond glaze
-1 cup of sugar
-1 tbsp flour
-1/2 cup of 35% cream
-1/2 cup of butter
-1 tsp almond essence
Mix the sugar and flour in a pot
Add the rest of the ingredients and boil for 1 minute
Cool and frost the cake

**This recipe can easily be halved.
**You can also add 3/4 cup dried cranberries or chopped almonds
