Roasted prime rib


*Ingredients:

°1 prime rib roast, 5.75 pounds (2 bones)
+There are no measurements here. Just generous amounts of the following:
°Butter at room temperature
°Herbs of Provence
°Fresh cracked pepper
°Salt 

* Methods :

Preheat oven to 500 degrees F (this MUST be an accurate temperature)
Placing roast, rib side down, in roast pan
Stir pepper and herbs into butter until well blended.
Spread the butter mixture all over the surface of the prime rib. The more, the better.
Put the coarse salt on the entire surface of the butter. Be very GENEROUS. Using more than you think you must here. Most of salt will run off & very some will remain on meat. I can't stress the "generous" enough.
 
Put the roast in the oven at 500 degrees for 30 minutes as directed in step 1. The time will depend on the size of your roast. After the 30 minutes, simply turn off the oven and walk away for 2 hours. Yeah, walk away. DO NOT open the door, manipulate it or anything else. Pretend the roast doesn't exist.

After 2 h, removing roast, slicing & serving. You can remove the ribs for easier slicing and it's also easier to get 4 generous servings from the roast. Save the bones! Serve with juice or horseradish sauce etc. Anything you like. You will surely like this method. You will get a succulent, tender roast between rare and rare.
